WEEK3 - ROCK CAKES

Hiii. Today I am going to show you how to make these yummy rock cakes. They are easy to make which is a great chance for the kids to help too. These yummy rock cakes aren't actually cakes they are individual cookies. They are great to pack in a child's lunchbox. One thing that I love about making them is that I don't have to get out the electric mixer and use it. All you need is a wooden spoon!

DIFFICULTY: 1/3

makes about 10 - 15 (depends how big you make them)
cooking time 15 - 20 minutes

INGREDIENTS:
2 cups of flour
2/3 cup sugar
1 cup sultanas/chocolate chips (I used chocolate chips. I used 1/2 cup of milk chocolate chip and 1/2 cup of dark chocolate chips)
125g (4 OZ) of butter
2 eggs

METHOD:

Step1: Preheat your oven to 180c (350 - 375f)(gas mark: 4-5)
Lightly grease and line 1-2 baking trays.

Step2: In a small saucepan melt your butter.

Step3: While your butter is melting in a bowl add your flour, sugar and sultanas/chocolate chips. Mix them together well.

Step4: Once your butter has finished melting cool it down in a cold water bath or let it cool naturally.

Step5: Once your butter is cool add it in your bowl with the eggs and stir it well until combined.

Step6: Take a handful/tablespoonful of your mixture and shape it like a cookie. ( I made medium sized ones)

Step7: Place your cookies on a baking tray and cook in your oven.

Aaanndd your done! How simple.
