Hii. Today is ANZAC day so I decided to make some chewy ANZAC cookies. These cookie taste super yummy. They are similar to the coconut and muesli cookies that I made in week 1. You should definitely try to make them tonight for a snack on ANZAC day because they don't take long and you probably have the ingredients already in your own home. Let's get started :) !!

DIFFICULTY: 1/3
INGREDIENTS:
1 cup plain flour
1 cup rolled oats
1 cup desiccated coconut
just over 2/4 cups brown sugar
125g butter (4OZ)
2 tablespoons golden syrup
1 teaspoon bicarbonate of soda
2 tablespoons water

METHOD:
Step1: Preheat oven to 140c fan forced/ (270f). Line 2 baking trays with non stick baking paper.
Step2: Sift the flour in a large bowl and add the oats, coconut and brown sugar. Stir the ingredients in the bowl well.
Step3: Put the butter, golden syrup and water into a saucepan on medium heat. Stir until melted.
Step4: Once it has melted take it off the heat and stir in bicarbonate of soda. Then pour that mixture into your bowl and mix it up well!
Step5: Once your mixture is combined get a tablespoon and mould it into a cookies.
Step6: Flatten your cookies with a spoon or a fork. Place them in the oven for 10-20mins. Make sure that you don't make your cookies to big like me . Ooopss :p
